Professional chef Jonathan Karpathios has a clear mission. In his restaurant, Vork en Mes, he cooks with what nature provides him, and uses vegetables directly from his own nursery. Jonathan preaches, 'new food;' preparing dishes according to the season, with respect for both animals and the environment.


After the screening of the documentary, Het Nieuwe Eten, in which the Dutch chef (with Greek roots)  was followed for a year, Jonathan will be giving a presentation at the FFF. In this master class, Jonathan will share his philosophy about good food, and talk about his exploration amongst nature. As he shares this, together with one of the chefs from his restaurant, he will also prepare some dishes, of course giving you ample opportunity to taste everything.

Whoever thinks that Jonathan is an idealist has got it completely wrong. Not only does he like to philosophise about a sustainable food system, he then brings this into practice at his restaurant. Six years ago having found a building in a nature reserve in Hoofddorp, Restaurant Vork en Mes was born. Here, he has found space for his own herb garden, pigs, and later in neighbouring Aalsmeer, took over an empty greenhouse. This greenhouse is now growing 200 edible varieties of plants, and is mostly operated by volunteers wanting to learn about how food is grown.

 


Please note: Jonathan will be giving a workshop and presentation. Tomorrow's Food is a demonstration, meaning that you will not be participating in any actual cooking.
