A light meal, lots of vegetables, fragrant spices and a North African origin: Couscous has become a popular alternative to rice or pasta. In this workshop, you will learn how you can make the most delicious couscous that you will have ever eaten.


While the variant of pre-cooked couscous in which you throw boiling water is the most commonly known, this isn't necessarily real couscous. According to Merijn who will be giving the workshop, there's more to couscous. The coarsely ground durum wheat semolina, which is rolled into balls can be prepared, if the right preparation is done, from which, a wide array of dishes can be made.

Merijn Told, known from 24Kitchen, lets you experience the most authentic dishes from the Arab world. You will learn how to steam couscous, and season to taste. Think of orange blossom water, apricot, walnut and authentic tabbouleh. A refreshing cuisine with refined dishes, with which you can do more than you've ever imagined.

Together with her partner in crime Nadia, Merijn has written several cookbooks including Arabia; Arabia at Home and Bismilla Arabia. Arabia at Home will be published in English this Spring under the title, Under the Shade of Olive Trees. Many of the recipes from this book will feature during this workshop.
