Professional chef Jonathan Karpathios has a clear mission. In his restaurant, Vork en Mes, he cooks with what nature provides him, and uses vegetables directly from his own nursery. Jonathan preaches, 'new food;' preparing dishes according to the season, with respect for both animals and the environment.

Whoever thinks that Jonathan is an idealist has got it completely wrong. Not only does he like to philosophise about a sustainable food system, he then brings this into practice at his restaurant. Six years ago having found a building in a nature reserve in Hoofddorp, Restaurant Vork en Mes was born. Here, he has found space for his own herb garden, pigs, and later in neighbouring Aalsmeer, took over an empty greenhouse. This greenhouse is now growing 200 edible varieties of plants, and is mostly operated by volunteers wanting to learn about how food is grown.

Following the documentary Tomorrow's Food in which the Dutch chef (with Greek father) was followed for one year, Jonathan gives a workshop during the FFF. In this workshop you will prepare vegetable dishes with products from Jonathan's nursery. He will give explanation about different herbs and edible flowers that he grows there himself. And, of course, you can cram into the autodidactic chef with all your questions about real food and the 80/20 principle.
