Global Cuisines: Surinamese Roti

The Surinamese kitchen originates from a variety of contrasting cultures: Creole, Indo-Surinamese, Javanese, Chinese, Dutch, Jewish, Portuguese and Indian. The most famous dish is of course roti. Most often, we're unlikely to make it ourselves since delicious, unparallel tasting roti is never far away from our local Surinamese Toko.


Here, we want to change this. Those smells! Those spices! Far too hot, but the delicious Madame Jeannete sauce! How do you make that ingenious roti flat bread, and those mouth-watering vegetable and chicken dishes for yourself? And what else is there to the Surinamese kitchen?

Patrick Rechards is a roti expert, and knows too well, the historic flavours and dishes from the Surinamese kitchen. The Surinamese Amsterdammer has been cooking for parties, including the Kwakoe Summer Festival, which is held every year in Amsterdam Zuidoost.

In this workshop, Patrick will teach us how to make the authentic roti, and share his love for this extensive cuisine. After the workshop, we'll tuck into the folded pancake, filled with vegetables and meat using our hands, and then licking our fingers. Then you'll know how to make roti, having no more excuses to order it from a take-away; unless you're feeling lazy of course!
