FFF Restaurant: What's on the menu?

Twitterers out there will have seen the tasty photos we posted last Friday, when the FFF Restaurant menu was presented to the press. Although all the dishes are vegetarian, the optional chicken was the main topic of conversation.

The days that vegetarians had to ask for special dishes in restaurants are over. In the FFF Restaurant, we are taking that a step further: carnivores can request an optional meat dish, because the standard menu is completely vegetarian. This makes eating meat a conscious choice, not something that automatically appears on your plate. It is an important approach, say the chefs, because vegetables should be at the heart of what we eat.
 
And so the menu is built around seasonal vegetables and Dutch cheeses: radishes, white asparagus, rhubarb, lentils, Gouda Farmer’s Cheese (a Slow Food presidium) and many other good, clean and fair ingredients. 
 
And the meat? Each year FFF chefs Samuel Levie and Joris Bijdendijk choose one ingredient they believe deserves extra attention. This year that is the male chick which, because of its gender, is worthless to the egg industry and is killed at birth. The chefs will use these cockerels, which are given the time and space to mature at Hollands Haantje, to prepare something very special.
 
The restaurant this year is extra special too. Not only because it is being built from scratch in an empty hall at the Westergasfabriek, but also because FFF chef Joris Bijdendijk recently earned his first Michelin star at restaurant Bridges. Despite his busy schedule, Joris will join Samuel Levie, Yascha Oosterberg, Oliver Rowe, Dionne van Zijl and a team of voluntary super chefs for three days in the festival kitchen.
