A good dish consists of good ingredients. In this workshop, you will learn to make four ravioli's with the us of Presidia's: products of small farmers, fishermen and growers with a Slow Food certification, to protect them because of their important gastronomic status.

Slow Food is not only about products, but also about chefs who prepare meals with these products. Last autumn, the chefs of Merkelbach, Toscanini, Osteria Al Bacaro and Pianeta Terra have joined the Alliance of Slow Food Chefs. This means that each of these restaurants feature at least three presidia on their menu. These presidia are little pieces of heritage: special, local products which can only be found in a certain place, such as ganxet beans from Spain. 

In this workshop, you will learn the signature ravioli of the four chefs, just with vegetables from the current season.

This workshop links to the movie Canned Dreams, which deals with foodmiles and production of one simple can of ravioli.
